Gianfranco Pascucci, born in Fiumicino, has dedicated his life to the enhancement of the sea and its resources. Self-taught chef, he began his career preparing fish dishes with ingredients personally collected along the Lazio coast. In its restaurant, Pascucci al Porticciolo, located in the tourist port of Fiumicino, offers a cuisine that celebrates the marine and terrestrial biodiversity of the territory.
His culinary philosophy is expressed in the menu "How deep the sea is", a gastronomic journey that explores the sea depths through dishes such as raw amberjack with ceviche, Kaluga-Amur caviar, and celery. Each dish is prepared with precision, respecting the raw material and enhancing local resources.
The restaurant has received numerous awards, including a star in the 2023 Michelin Guide, three forks in the Gambero Rosso Guide, and three hats in the Espresso Guide, attesting to the excellence of its gastronomic proposal.
